Title: Pickled Sweet Peppers and Onions

Yield: 1 Servings

2lbFresh peppers, green, red,
  Yellow, orange
1mdOnion, sliced (red or
  White)
4 Garlic cloves, sliced
8 Whole allspice
24 Peppercorns
  Bay leaf torn into quarters
2cVinegar
2cWater
2tsSalt
4tbOlive oil

Wash and slice the peppers. Slice onions. Pack into sterile jars. Into each jar, put garlice, 2 allspice, 6 pepperconrs and a piece of the bay leaf. Bring bring mixture to a boil. Pour over top. Pour 1 tbsp of oil over top, just using enough to completely cover peppers. Seal with two piece lids. Boiling water bath for 7 minutes. Store in cool dry spot.
